April TW Food Challenge: Teriyaki Salmon.

One of my favorite things about cooking is finding recipes that sound amazing and then adapting them to make them mine. It’s definitely much easier to do that with cooking vs baking. There is less chemistry involved. That’s what happened with this recipe. I found it via StumbleUpon one day at work and it just looked good.

And, as an added bonus, one of my Lent resolutions was to step outside of my cooking comfort zone (Italian) and try something new and scary (Asian). The Mister is really fond of Asian food and it’s never been something I’ve made much of. That really has changed over the last year.

The theme of the April Food Challenge sponsored by That Wife is Favorites. This Teriyaki Salmon recipe is one of my favorites right now.

Here’s my little kitchen doing it’s thing. I’ve got pots on three of the four burners and the frozen broccoli in the microwave. I try to be efficient when I cook, sometimes I just end up making a bigger mess.

Look at the bubbly teriyaki goodness. If you think this looks good, you have no idea how wonderful it smells. And I won’t even begin to tell you how good it tastes. Make it for yourself and find out!

Here’s the recipe:

Teriyaki Salmon

Adapted from The Good Mood Food Blog.
2 salmon fillets skinned
3 tbsp teriyaki sauce
2 servings of Asian-like noodles of your choice (I’ve use Vermicelli because it’s what’s in the pantry)

3 cloves minced garlic
5 tbsp soy sauce
1 tbsp brown sugar
1 tbsp of sesame oil
the juice and zest of 1 lime

broccoli florets (steamed or defrosted…)

Slice the salmon into bitesize chunks and place in a bowl with the teriyaki sauce. Cover and place in the fridge to marinate. While the salmon is marinating prepare the rest of the ingredients. Cook the noodles according to instructions on the packet, drain and set aside. In a small sauce pan warm the garlic slightly and before it starts to burn add the brown sugar, soy sauce, lime juice, zest and sesame oil and bring to the boil, reduce the heat and allow the sauce to bubble away gently for about 6-8 minutes. While the sauce is cooking, in a large frying pan cook the salmon pieces in the teriyaki marinade over a medium heat until browned on all sides. Pour the sauce on top and let it bubble and reduce. Serve the salmon pieces and broccoli on top of the noodles and drizzle over the teriyaki sauce.

Sit back, enjoy and don’t drool too much!

Yum! We usually just buy Kikkoman teriyaki glaze to put on our salmon…but I’ll bet this is SO much tastier!

Asian food is really out of my cooking comfort zone, too (aside from fried rice). I’ve never really been able to master it for some reason. Oh, well. I’ll keep trying!

This does look amazing. I need to step out of my food comfort zone as well and my hubby loves Salmon. I never make it.
